Vegan "Cheese" Sauce

Mix Dry Ingredients:
2 cups red star nutritional yeast
6 Tbsp coconut flour
1 tsp unrefined sea salt

Stir In:
2 cup water
2 Tbsp Toasted Sesame Oil
2 Tbsp prepared mustard

Serveas a sauce over pasta or vegetables etc. (340 grams of rice pasta works great such as Tinkyada Organic Brown Rice Pasta Spirals).




Potlatch Dahl-serve as soup or over brown rice! I love to serve with fresh raw and ripe avocadoes and tomatoes!

Bring the following ingredients to a boil and then simmer until lentils are soft:
3 cups red lentils
8 cups stock
1/2 tsp chili pepper flakes
1 Tbsp tumeric
2 tsp salt
3 Tbsp unrefined coconut oil

Saute:
Saute the following spices in butter until fragrant and then add to simmering pot.

3 Tbsp butter
3 pinched hing/asoefetida
1 Tbsp cumin
6 med cloves of garlic (pressed)
3/4 tsp ginger powder

Once you add the saute, the lentils should be done and the spices mingled in about 20 min.
Yummy Yam Pancakes

2 medium yams grated
1 yellow onion, chopped
1 red pepper, chopped
6 garlic cloves, pressed
juice of 1 lime
1/4 cup tamari

Mix all ingredients and form into pancakes. Fry in generous amounts of butter!

Momma Sherry's Grounding Hot Chocolate:

Make your favourite hot chocolate recipe (preferably made with dark cocoa and unrefined cane sugar).

Now add 2 tsp-1 Tbsp coconut oil to each cup of hot cocoa and a dollop or two of organic whipping cream (preferrable raw) and watch you kids calm right down! This drink is rich in magnesium and the absorption of glucose is  slowed right down with the quality nurturing and grounding healthy fat of coconut oil! Nurture your children with quality whole food sweetness, now and again!!!
Amazingly Cheesey (but not so) Biscuits

1 1/2 cups  spelt flour
1/3 cup nutritional yeast
1/3 cup wheat germ
1 Tbsp non aluminum baking powder
1 tsp unrefined sea salt
2/3 cup water
1/3 cup lightly melted coconut oil

Melt oil on low.
Mix dry ingredients and stir in water and oil. Knead dough and then roll out about 1/2 inch thick. Oil cookie sheet with coconut butter and transfer cut dough (with a cookie cutter or drinking glass) onto baking sheet.

Cook for 10 ish minutes at 450 F.
Choco-Coconut-Cranberry Macaroonishes

Combine:
1/2 cup butter (unrefined coconut oil)
1/2 cup stevia sweetened cranberry sauce
1/2 tsp lemon extract
1/2 tsp green stevia powder
4 eggs

Combine  the following and then fold in liquid ingredients:
1/2 cup coconut flour
2 cups of dried coconut
3/4-1 cup chocolate chips

This is the perfect sweetness if you get a chocolate chip in every bite. If you are using less chocolate chips, experiment with more stevia/lemon extract to get that perfectly sweet taste in every bite!

Oil a cookie sheet and then drop by the spoonful.

Cook at 375 degrees for 20 min. Makes 28 Macaroonishes!

Recipe Spotlight:
Cranberry Sauce

Fresh Cranberries (how ever much you want to make at a time!)
Bring to a boil on the stove with 1 cup water or more (1 cup water per 4 cups cranberries) and then turn down to simmer.
Sweeten to tast with Stevia when it is less hot so you can taste test.
Take off the stove and store in a glass jar in the fridge.

Use as a side dish, syrup over pancakes, for baking instead of apple sauce, and don't forget, this is a great poor man's jam!
Whole Wheat Oven Baked Bannock!

Grease baking pan w/ butter or unrefined coconut butter/olive oil!

Stir Together:
4 cups organic whole wheat flour
1/4 cup unrefined cane sugar
1 tsp unrefined salt
3 Tbsp baking powder

Work this in with your hands:
1/2 cup unrefined coconut oil

Now stir in:
2 free range eggs (don't whip, just crack in and stir)
2 1/2 cups organic or raw milk

Mix with hands, but don't knead, spread in generously oiled pan. Bake @ 400 degress Farenheit for 40 min (test with toothpick or butterknife). Let sit for 5 min before turning over in cooling rack.

Optional: Add dried or reconstituted dried fruit!
